Zabaione is an Italian dessert made with very simple ingredients: egg yolks, which are whipped to make a custard in a bain-mairie, sugar and sweet wine (usually Marsala). Zabaione can be more or less liquid. The thick version is a typical dessert and can be served with biscuits. The liquid version gave origin to an Italian egg-based liquor called Vov. There are certainly some similarities between Zabaione and eggnog, even though zabaione is definitely thicker in consistency. Try them both to compare the taste!
This dessert was already known during the Renaissance and was served at Caterina de’Medici’s palace. It’s origin, however, dates much further back in time. Today, it is a festive classic and a fantastic winter warmer. The moderate alcohol content also helps to digest the excessively generous amount of food that we tend to eat at Christmas.. which is always appreciated.
